The Hakubishi Hon Mirin is an authentic Japanese mirin sauce handcrafted following traditional methods and using the single ingredients of glutinous rice, rice malt, and shochu. Unlike aji mirin which contains sweeteners and other additives this hon mirin is made by fermenting a combination of the three previously mentioned ingredients; steamed mochi rice, koji (rice malt) and shochu (rice liquor) for 60 days.
